From the Gold Prize in Panama World's Fair in 1915 to 1950 after the New China was born,the output of 3 spirit houses for Moutai was also very limited.
In the 50 years from 1951 to 2000,the output of Moutai has been developed to 5,000 ton on an annual basis.
In 1958,Chairman Mao Zedong told Zhou Lin (native of Renhuai),then Secretary of CPC Kweichow Provincial
Committee,that"the annual output of Moutai should be raised to 10,000 ton".
For many years,party and government leaders at all levels as well as leaderships of Moutai Factory have tried their best and all relevant departments have provided vigorous support,but regrettably,Moutai cannot be produced within a short period of time.
The reason behind this is the technique,and the technique determines the quality.
With regard to the time of brewing,there is only one season in a year for the production of Moutai (in coincidence with the rhythm of spring,summer,autumn and winter). The 7 rounds of liquor baked each year shall be sealed and stored for at least 3 years before blending,and will be brought out of the factory after over a year. The age of the liquor including the time for the adding of raw materials,fermentation and liquor baking shall be over 5 years. If computed with the liquor of dozens of years used for blending,the age of Moutai shall also be moderately increased,whereas common liquor will be brought out of the factory in 1-2 months and the longest no more than 1 year.
It is just for this reason the number of liquor tanks of Moutai is more than the number of plants.
For these years,unique and traditional brewing technique has been observed by all generations for Moutai.
In the era of the transition from planned economy to the market economy,a bottle of Moutai could be sold at over 100 Yuan with an approval note,and the market temptation was staggering. However,people of Moutai were not moved,and what they have been pursuing is the quality.
Quality is determined by meticulous technique.
Of course,some people would think that Moutai is not be good at developing the marketing,at earning money,and is thus incomparable at the rate of the development of some enterprises in the liquor industry.
What is clear in the minds of the people of Moutai is that if the pursuit of quality gives way to the pursuit of output,then this national brand would have already been ruined long before.
An authoritative people responsible for quality said,emotionally,"I have been following the quality of Moutai for over 20 years. It is really rare that the quality of Moutai has been stable.
There is surely something lost for something gained.
But what people of Moutai have lost is the trivial current profit,and what they have gained is the perpetual rich return.
